Developers won't need to take any action in order for these new regional ratings to appear alongside Apple's global age ratings.
An app that contains "Infrequent or mild simulated gambling" will be categorized as 12+ according to the current App Store age ratings, while an app that contains gambling or "Frequent or intense simulated gambling" will be categorized as 17+.
