Assessing a horse's fitness before a race

How do trainers and handlers assess a horse's fitness before a race? Based on my experience watching horses and talking to trainers, I think there few important things they focus on.
First, trainers closely monitor their horses eating and sleeping habits. Any changes there can be a red flag. Second, they observe how the horse's weight is changing and make sure it stays in shape for optimal performance. Third, they time the horse during training runs and compare to previous performances. Any deterioration there suggests reduced fitness. Finally, they watch for any new or persistent injuries from overwork. A horse's gait is also carefully analyzed for signs of being "off".
