How to know if dealer hand is strong or weak?

I play casinos many year. I see some thing help know dealer hand. When I see dealer open card, this help little know if hand is strong or weak. Also, when I know how many card left in deck, this help because some card combinations are more or less likely. But no guarantee. You must still play smart based on chance of each hand. You control your bet wise, not just from dealer open card and deck count only.
