Is there an AI that controls live odds in sport betting?

I have followed some matches closely and I realize that most of these odds get shot off when something interesting like a penalty is given or a goal occurs in a match. And I wonder if this is controlled by humans or it has an Artificial Intelligence system working with it to make sure that odds are changed constantly.

I think that this part is more technological where the program is designed to lock the odds when a big chance arises. It is a feature that is also quite helpful for the gambler as well, I must say
