Effect of dealer taking two cards in 4-player game:

• 4 players get one card each = 4 cards dealt = 7.7% ten probability
• Dealer taking two cards leaves two cards for players
• Probability of one of two cards dealt to players being a ten = 3.8%
• So dealer taking two cards reduces ten probability from 7.7% to 3.8%

In general: More cards dealer takes = fewer cards to players = lower probabilities to players. Specific effect depends on how many dealer takes relative to how many would be dealt. But dealer taking majority of cards significantly reduces player probabilities. The more the dealer takes, the less likely high-value cards are dealt to players.
