What is the "Dealers Choice"?

The "Dealer's Choice" at the poker table means it's the dealer's turn to choose which hand they want to deal. Some dealers like to mix things up to keep players on their toes. Maybe they deal a few Stud hands, some Draw Poker, throw in some Seven Card Stud or Omaha.
Keeps the suckers guessing. Before they know it, their stack of chips is lightenin' up faster than a prairie fire. That's my strategy as the man dealing the cards, keep 'em confused and they'll be folding their hands quicker than a three-legged dog trying to stay upright. The only choice that really matters at the table is whether to call the bet or fold. The deal is never in the players' favor.
