Worst Case Scenarios: When Playing Multiple Cards Goes Wrong

What situations will justify not counting cards and playing single cards only? I have lost big money doubling down on hard 13 against low dealer cards. Splitting tens when one card was an ace also flopped once. Playing more cards seems good strategy but what are some worst case scenarios I should look out for? Please share your views and experiences.
